Cookie Pizza

My Mom loved to make and eat this pizza when she was a little girl.  Her friends always asked her to make it for parties and celebrations.  I like it too, and it is fun and easy to make.

Mixer with cookie mixing attachment

Rubber scraper

Measuring cups and measuring spoons

12" pizza pan

Non-stick Spray

1 cup butter (2 sticks), softened
1/2 cup sugar
1/2 cup packed brown sugar
1 egg
1 teaspoon vanilla
1 3/4 cups flour

1 cup peanut butter chips
1 1/2 cups semi-sweet chocolate chips
3 cups marshmallows, cut in half


How to Make Cookie Pizza

Have an adult help you preheat the oven to 375. Open the packages of butter and put them in the mixing bowl. Pour in both the white and brown sugars. Turn the mixer on medium speed and mix the sugar and butter until it looks light and fluffy.  This is called "creaming the butter and sugar." 

Add the egg to the butter and sugar mixture.  If you haven't had any practice cracking eggs, it would be a good idea for you to crack the egg into a small bowl first, then dump it into the batter; that way you won't accidentally get eggshell in the dough. 

Measure the vanilla into the mixture and turn the mixer to a medium speed; mix until very light.  Turn off the mixer.

Add the flour and turn the mixer on to the lowest speed.  If you turn it up higher, the mixer will shoot flour from the mixing bowl all over you and the kitchen.  It will be a big mess to clean up.

Stop the mixer and scrape down the sides, then turn on the mixer and mix well.

Spray the pizza pan with non-stick spray.  Make sure you don't get the can too close to the pan; you should spray 10-12" away from the pan. Remove the beater from the mixer and scrape the dough from the beater onto the greased pizza pan.

Scrape the dough from the bowl to the pizza pan.  Use the rubber scraper to get every bit. Coat your hands with a little flour and then press the dough evenly onto the pizza pan. Have an adult help you put the crust in the oven. Set the timer for 12 minutes.  While the crust is baking, you can cut the marshmallows.

Cut each marshmallow in half through the middle. Since the inside of marshmallows is quite sticky, it's a good idea to dip your scissors in a glass of water so they don't stick. When the timer rings, have an adult help you remove the crust from the oven.  Put the pizza crust on a cooling rack or pot holder on the counter because it will be very hot; you don't want to ruin the countertop.

Sprinkle the chocolate chips evenly over the crust. Sprinkle the peanut butter chips over the chocolate chips. Place the marshmallows over the pizza. The marshmallows should cover the chocolate and peanut butter chips.  Now put the pizza back in the oven for 5-10 more minutes or until the marshmallows are puffy and brown.
Remove from the oven to a cooling rack. This is how the pizza will look when you take it out of the oven.  You will need to let it cool thoroughly.
